Vegan Thursday: January 7th
Miss Katie proposed a Vegan Thursday challenge, so I was happy to jump on the ol’ Vegan day bandwagon!
Breakfast
Protein oats (brown rice protein powder) with an experimental nut butter.
I had bad lighting for breakfast- I was groggy and a little rushed!
Vegan lunch was so perfect though… I made the same pizza from last night (YOU. HAVE. TO. TRY. THIS!!!) and enjoyed it with tea and Amy’s vegetable soup. I liked the shapes of the veggies but really disliked this soup. Ick!
Followed with vegan chocolate and later a big bowl of cereal with almond milk and rice protein powder for snack.
Dinner was the fun part: I made my parents a dal masala curry that came out so fantastic!
SO. GOOOOOOD!
“Directions” (ish…)
- Cook 1 c. lentils with 3 cups water, 1 tsp cumin, 1 tsp salt in a rice cooker for 30 minutes.
- Meanwhile… heat a tsp of oil in a large Calphlon. Sautee a diced onion with the following:
- Turmeric
- Cumin
- Red pepper flakes
- Cayenne pepper
- 3 Bay leaves
- Fenugreek
- Cinnamon
- Cloves
- Nutmeg
- Ginger
- Allspice
- Coriander
- Fennel
- Anise seed
- Black pepper
- Add 2 cloves minced garlic and cook for another 3 minutes
- Add 1 24 oz can stewed tomatoes (I like Fermano’s brand) and break up.
- Add (!!!!) 1 dry habanero pepper and stir
- Simmer, covered for 10 minutes then remove the habanero. Re-cover and continue simmering until lentils are done to al dente (about 10 more minutes)
- Stir in lentils and chopped snap peas plus a handful of cilantro.
- Heat covered for about 5 more minutes then SERVE
I love Indian food!!!! It’s so so much fun.
Here are the top 5 reasons I could cook this every day:
- It’s spicy and subtly sweet
- It’s nutritious and tasty and easily becomes vegan
- The ingredients are always on hand: dry lentils, canned tomatoes, spices, onion…
- It’s even better the next day
- IT’S SO MUCH FUN!!!
I think I’m going to make my own line of super authentic curry powders, a la Mae!
(haha I was kidding about the authentic part…)
So both of my parents were happy vegans tonight and I have a yummy lunch ready for tomorrow. Please, next time you are in the bulk spice section buy an ounce of everything. Try your own combinations- curry is a delicious kitchen adventure!!

I was a sore girl today- yesterday’s workout was awesome! I even did 20 minutes of yoga before bed.
Yogis- I found a hot yoga studio in the city where I work… I was so excited when I realized I still have a predicament. I’m not supposed to be without my orthotics because I risk tearing my tendon again (I have fallen arches)… I called the yoga studio and they said shoes were absolutely not acceptable. Does this mean yoga practiced away from will never be a possibility??

Let me know if you make it! I hope you like it!!! (It’s really not as expensive as it seems- I just buy an ounce or so of tons of spices then try different combinations. It usually comes to around $5 for 10 or more, which isn’t bad compared to buying ONE McCormick spice for $5!!) Mae
Yummers! Soup…oats, etc…you have all these creative ingredients that I have never even heard of …but nice for me to LOOK at anyway
